Soup is the ultimate comfort food. Sitting down to a big bowl brimming with veggies, meat, pasta, and flavorful broth is such a treat! It immediately soothes you (sipping soup is almost meditative), and when it’s hearty, it really fills you up. You might say it’s good for both body and soul! The thing is, I like to eat soup for a weeknight dinner, but I don’t have a lot of time to devote to cooking it. And I’m always looking for ways to save money, too, so even better if I can use what I already have on hand to make it. That was the inspiration for this bow-tie ‘n’ bean soup recipe. It’s a quick and easy meal, the ingredients are likely already sitting in your pantry and fridge, and it’s absolutely delicious! That’s a win-win-win in my book.
Not only is this soup super tasty, it’s also packed with healthy fiber, thanks to red kidney beans and zucchini. Ingredients
- 1 medium onion, minced
- 1 cup halved and thinly sliced zucchini
- 2 Tbs. olive oil
- 2 (14.5 oz.) cans diced Italian tomatoes
- 4 cups low-sodium chicken broth
- 1 (15.5 oz.) can red kidney beans, drained and rinsed
- 2 cups cubed cooked turkey
- 4 oz. mini farfalle pasta, cooked
- ¼ cup minced fresh basil
Instructions
PrintIn pot over medium-high heat, cook onions and zucchini in oil 3 min. Stir in next 3 ingredients. Bring to a boil. Reduce heat; let simmer 10 min.
Add turkey and pasta. Cook 5 min. Stir in basil. Season with salt and pepper.
