Delicious Bow-Tie ‘n’ Bean Turkey Soup Recipe Saves Money + Time

This hearty bowl cooks up fast — and the ingredients are already in your pantry!

Soup is the ultimate comfort food. Sitting down to a big bowl brimming with veggies, meat, pasta, and flavorful broth is such a treat! It immediately soothes you (sipping soup is almost meditative), and when it’s hearty, it really fills you up. You might say it’s good for both body and soul! The thing is, I like to eat soup for a weeknight dinner, but I don’t have a lot of time to devote to cooking it. And I’m always looking for ways to save money, too, so even better if I can use what I already have on hand to make it. That was the inspiration for this bow-tie ‘n’ bean soup recipe. It’s a quick and easy meal, the ingredients are likely already sitting in your pantry and fridge, and it’s absolutely delicious! That’s a win-win-win in my book.

Not only is this soup super tasty, it’s also packed with healthy fiber, thanks to red kidney beans and zucchini. Canned Italian tomatoes add zesty flavor, and fresh basil gives it a finishing pop of freshness. While our recipe calls for cooked turkey, you can substitute cooked chicken instead. Ingredients

  • 1 medium onion, minced
  • 1 cup halved and thinly sliced zucchini
  • 2 Tbs. olive oil
  • 2 (14.5 oz.) cans diced Italian tomatoes
  • 4 cups low-sodium chicken broth
  • 1 (15.5 oz.) can red kidney beans, drained and rinsed
  • 2 cups cubed cooked turkey
  • 4 oz. mini farfalle pasta, cooked
  • ¼ cup minced fresh basil

Instructions

In pot over medium-high heat, cook onions and zucchini in oil 3 min. Stir in next 3 ingredients. Bring to a boil. Reduce heat; let simmer 10 min.

Add turkey and pasta. Cook 5 min. Stir in basil. Season with salt and pepper.
