Ingredients
- 1 Tbs. olive oil
- ½ cup finely chopped red onion
- 1 clove garlic, minced
- 1 lb. ground chicken
- 2 tsp. chili powder
- ¼ tsp. + ⅛ tsp. salt
- 1 (10 oz.) can mild diced tomatoes and green chilies
- 2 Tbs. tomato paste
- 1 (14.5 oz.) can pink beans, rinsed, drained
- 4 cups thinly sliced cabbage (6 oz.)
- ¼ cup bottled olive oil-and-vinegar salad dressing
- 2 tsp. lime juice
- 1 tsp. grated lime zest
- 16 slider rolls, split
- 4 scallions, thinly sliced
- ½ cup fresh cilantro leaves
Instructions
PrintCoat 4-qt. slow cooker with cooking spray. In large nonstick skillet, heat oil over medium heat. Add onion; cook stirring, until softened, 5 min. Add garlic; cook, 30 sec. Add chickn, chili powder and ¼ tsp. salt; over medium-high heat, cook, stirring, until browned, 10 min. Transfer to bottom of slow cooker. In bowl, mix tomatoes and tomato paste; add to slow cooker. Cook on low 3 hrs. Stir in beans; cook until thickened, about 1 hr.
In bowl, mix cabbage, dressing, lime juice, zest and remaining salt. Dividing evenly, top each roll bottom with slaw and chicken. Add scallions, cilantro and roll tops.
