One-Pan Chicken Legs with Butter Beans and Tomatoes Recipe is Simply Delicious

I’m always looking for new ways to cook chicken, so I was excited when our test kitchen came up with this chicken legs with butter beans and tomatoes recipe. It’s a clever combination of three healthy (and tasty!) ingredients —  chicken legs, which stay juicy and tender during cooking; cherry tomatoes that literally burst with flavor; and butter beans. If you’re wondering what butter beans are, I had the same question! It turns out that butter beans are the same thing as lima beans (who knew?) and they have a creamy texture and a buttery flavor. They’re delicious in soups and stews as well as dishes like our chicken legs recipe.

Butter beans are nutritious, too — one cup contains 12 grams of protein and 9 grams of fiber. In our recipe, the beans soak up the zesty flavor of the tomatoes and add a delicious element to the roasted chicken legs. Yum! Even better, this meal is quick and easy to prep. Ingredients

  • ½ tsp. salt
  • ½ tsp. garlic powder
  • ½ tsp. paprika
  • ¼ tsp. pepper
  • 4 chicken leg quarters, about 3 lbs.
  • 1 (15.5 oz.) can butter beans, rinsed, drained
  • 1 cup cherry tomatoes, halved
  • 1 Tbs. olive oil
  • 1 lemon, halved

Instructions

Heat oven to 400°F. Coat large roasting pan with cooking spray. Combine first 4 ingredients; rub over chicken. Transfer to roasting pan.

In bowl, toss beans with tomatoes and olive oil; reserve. Roast chicken until no longer pink near bone, about 40 min., adding bean mixture during last 15 min. of cooking time. Broil 2-3 min. Squeeze lemon halves over chicken.
