Luscious + Creamy Chicken Pasta Alfredo Recipe Is a Weeknight Dinner Winner
With one-third less fat and calories than the classic, enjoy – almost guilt-free
On busy weeknights, the last thing I want to do is slave over a hot stove to get dinner on the table. That’s why I’m always looking for dishes that are easy to prepare yet only taste like I’ve been cooking all day. That’s why this Chicken Alfredo Pasta recipe is ideal. It’s ready to eat in in just 25 minutes. Best of all, this creamy bowl is absolutely delicious.
To achieve a perfectly crisp-tender texture for broccoli, we toss it in with the pasta during cooking. This saves a step of having to steam the veggie and dirty another pot. Then we have a short-cut trick to creating the luscious sauce. We start with a can of condensed soup. How easy is that? Brown the chicken first, then simmer in the sauce with garlic and milk. Ingredients
- 8 oz. linguine pasta
- 4 cups broccoli florets (8 oz.)
- 1 lb. boneless, skinless chicken breast halves, cut into 1" pieces
- ¼ tsp. salt
- ¼ tsp. pepper
- 1 (10.5 oz.) can 98% fat-free condensed cream of chicken soup
- 1 cup milk
- 2 large cloves garlic, minced
- ½ cup shredded Parmesan cheese
- 2 Tbs. chopped fresh chives
Instructions
PrintCook pasta according to package directions, adding broccoli during last 2 min. of cooking time; drain. Return to pot. Coat nonstick skillet with cooking spray; heat over medium-high heat. Add chicken, salt and pepper; cook, stirring, until browned, 5 min.
Stir in undiluted soup, milk and garlic; bring to boil. Reduce to medium-low. Cover; cook, stirring occasionally, until chicken is no longer pink, 3–5 min. Stir into pasta and broccoli. Transfer to serving bowl; top with Parmesan and chives.
