Citrusy Grilled Asparagus Recipe Is A Delicious Summer (Or Any Time!) Side

Summer might be winding down, but there’s still time to fire up the grill and enjoy dining outdoors. Truth be told, I continue to grill during fall while the weather is still crisp and clear. And if I’m lighting the grates to cook up the main course, why not pop the veggies right alongside. That’s why I love this Citrusy Grilled Asparagus recipe. It cooks up in minutes and it’s the perfect accompaniment for any meal.

Grilling veggies caramelizes natural sugars for a smoky-sweet bite that can’t be beat. We whip up a zingy marinade with olive oil, orange juice and rosemary. The tangy sweet juice deliciously complements the herb’s piny flavor. Let the asparagus marinate for about an hour, then simply pop it on the grill about 10 minutes before you’re ready to eat. Once cooked, the marinade doubles as the dressing for the tender spears. Grill along with our video then leave us a comment.

Ingredients

  • 1 Tbs. olive oil
  • 1 orange, zested and juiced
  • 2 Tbs. minced red onion
  • 2 Tbs. chopped fresh rosemary
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 lb. asparagus, trimmed

In bowl, whisk olive oil, orange zest and juice, onion, rosemary, salt and pepper until combined. Add asparagus and let sit for 1 hr.

Prepare grill for medium-high direct-heat cooking. Grill asparagus, turning occasionally, until just tender, 10–12 min. Transfer to serving platter; brush with remaining marinade. Garnish as desired.
