Delicious Crispy Oven Zucchini Fries Recipe Satisfies a Craving

For an extra kick, serve with creamy ranch dip!

 

French fries are my weakness. What can I say – I’ll go go for a salty bite over a sweet treat any day. But lately I’ve been wanting to eat healthier foods and get more vegetables into my diet. That’s why I love this Crispy Oven Zucchini Fries recipe. With only 155 calories and 2 grams of fat per serving, it satisfies a craving practically guilt-free.

Zucchini is a good source of fiber. It’s loaded with good-for-you nutrients like potassium, vitamin C and B6 too. We coat the veggie sticks in panko, Parmesan and smoked paprika. The breadcrumbs and cheese create a crunchy coating while the paprika adds delicious savory flavor. Then bake at a high oven temperature with just a spritz of cooking spray so there’s a lot less fat. Ingredients

  • ½ cup all-purpose flour
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 egg
  • 1 egg white
  • ½ cup panko breadcrumbs
  • ¼ cup freshly grated Parmesan cheese
  • ½ tsp. smoked paprika
  • 2 zucchini (about 12 oz.), cut into 4"x½" sticks

Heat oven to 425°F. Coat large rimmed baking sheet with cooking spray. In pie plate or shallow bowl, whisk flour and some salt and pepper. In another plate or bowl, beat egg and egg white. In third plate or bowl, whisk panko, Parmesan, smoked paprika and a remaining salt and pepper.

Dip zucchini in flour, then in egg, then through breadcrumb mixture. Place pieces 1" apart on baking sheet. Bake 10 min.; flip. Bake until golden and crisp, about 10 min.
