But cooking up a batch from scratch doesn’t have to be a chore. Take this Easy Veggie Soup recipe. It cooks in one pot so clean up is a snap. Plus, it’s packed with good-for-you ingredients.

To make the broth, we start with low-sodium vegetable stock and canned tomatoes. Then stir in frozen peas and carrots. Frozen veggies are partially cooked so they soften up in no time. Cabbage is chock full of vitamins and minerals. When cooked, it has a mild sweet note that makes a delicious addition to this dish. We finish off with an extra drizzle of heart-healthy olive oil. Ingredients

  • ½ cup olive oil
  • 1 onion, sliced
  • 4 tsp. minced garlic
  • 6 cups low-sodium vegetable broth
  • 15 oz. can diced tomatoes
  • 1 cup frozen peas and carrots
  • 1 cup sliced cabbage
  • 2 tsp. Italian seasoning

In soup pot, heat 1⁄4 cup olive oil over medium; add onion and cook until starting to soften, 4-5 min. Add garlic; cook 1 min. Add broth, tomatoes, peas and carrots, cabbage and seasoning. Bring to boil, then simmer 10 minutes; stir in remaining 1 ⁄4 cup olive oil.
