- 1 onion, sliced
- 4 tsp. minced garlic
- 6 cups low-sodium vegetable broth
- 15 oz. can diced tomatoes
- 1 cup frozen peas and carrots
- 1 cup sliced cabbage
- 2 tsp. Italian seasoning
Instructions
PrintIn soup pot, heat 1⁄4 cup olive oil over medium; add onion and cook until starting to soften, 4-5 min. Add garlic; cook 1 min. Add broth, tomatoes, peas and carrots, cabbage and seasoning. Bring to boil, then simmer 10 minutes; stir in remaining 1 ⁄4 cup olive oil.
