Tex-Mex Zucchini Boats Recipe Is the Perfect Dinner-for-One That’s Ready Fast

Zucchini is the perfect summer vegetable. It’s light and delicious, plus there are so many ways you can cook it, including the grill or the air fryer. Need a pasta recipe with more veggies? Add in zucchini to carbonara or lasagna for a more nutritious bite. One of our favorite ways to use it in this Zucchini Boats recipe that makes one serving — we stuff it with a quick Tex-Mex filling, then bake it for a meal that’s ready in just 30 minutes.

With zucchini as the base and black beans as the protein, we make this dish completely vegetarian — taco seasoning gives it plenty of spice. Don’t be afraid to switch it up if you prefer to add in already-cooked ground beef or chicken though! Let us know how you filled your boats in the comments.

Ingredients

  • 1/2 cup red onion, finely chopped
  • 2 tsp. taco seasoning
  • 1/2 cup black beans
  • 2 zucchini
  • 1 oz. cheese, such as cojita

Instructions

Mix onion, seasoning and beans. Halve zucchinis, scoop centers and fill with bean mixture. Add cheese. 

Bake at 350ºF until tender, 25–30 minutes. Garnish with salsa.
