Quick Fettuccine with Broccoli Pesto Recipe: A Delicious Twist On A Classic Pasta Dish

I’m a huge fan of anything pasta. During summer there’s a bounty of fresh basil at farmer’s markets, and I often buy a few bunches and whip up pesto sauce. Served over spaghetti, it makes a quick and refreshing meal. But I’m always looking for delicious ways to get more vegetables into my diet. That’s why I love this Fettuccine with Broccoli Pesto recipe. It’s loaded with healthy ingredients. And it speeds to the table in just 30 minutes.

Broccoli is rich in antioxidants and helps reduce inflammation. We cook it in with the pasta. Then we take some of it and whiz it up with basil, olive oil, Parmesan, garlic and lemon. The green veggie adds subtle sweetness to the sauce. We toss it with fettuccine, chicken, the remaining broccoli and some of the pasta cooking liquid to tie it all together. Ingredients

  • 8 oz. fettuccine pasta
  • 5 cups broccoli florets
  • 1 lb. boneless, skinless chicken breast halves
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup fresh basil leaves
  • 1/3 cup olive oil
  • 1/4 cup grated Parmesan
  • 2 Tbs. lemon juice
  • 2 cloves garlic

In large pot of salted boiling water, cook pasta according to package directions, adding broccoli during last 2 min. of cooking time. Reserve 1/2 cup cooking liquid; drain. Return pasta to pot.

Meanwhile, coat large nonstick skillet with cooking spray; heat over medium-high heat. Sprinkle chicken all over with salt and pepper; add to skillet. Cook until browned, 4–5 min.; flip. Reduce heat to medium-low. Cover; cook until no longer pink, 10–12 min. Cool slightly, then slice.

In food processor, pulse 1 1/2 cups florets, basil and next 4 ingredients until smooth. Toss sauce, chicken, cooking liquid, pasta and remaining broccoli.
