Golden Potato Bake Recipe Is a 5-Ingredient Side That Makes Any Meal Extra Special

A sprinkle of chopped thyme adds more flavor to these buttery Yukon gold spuds

This Golden Potato Bake recipe produces a wow-worthy spud side that’s easy to prepare. It takes thinly sliced Yukon gold potatoes and layers them with melted butter, chopped thyme, salt and pepper. The dish is then baked until the spuds are tender before it’s quickly broiled for a crispy brown top. It’s a rich and tasty side worth enjoying with a hearty meat like beef or chicken. 

A sprinkling of thyme makes these buttery spuds even more yummy, but you can sub in any herb you have on hand. Also, you can make a smoky variation of this potato bake. Simply substitute one tablespoon extra virgin olive oil for one tablespoon butter. Use one teaspoon smoked paprika and a pinch of cayenne pepper in place for thyme. Continue with recipe.

  • 2 lbs. Yukon Gold potatoes
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 3 Tbs. butter, melted
  • 1 tsp. chopped thyme

Heat oven to 400°F. Coat 10” round quiche dish with cooking spray. Peel potatoes; cut into 1/8”-thick rounds. In quiche dish, arrange half of potatoes in concentric circles, overlapping about halfway. Brush potatoes with half of butter; sprinkle with half of salt, pepper and thyme. Repeat layering with remaining ingredients.

Bake until potatoes are tender, about 45 min. Broil until lightly browned, 3–4 min.
