- 8 Yukon gold potatoes (about 6 oz. each)
- 4 Tbs. butter
- 1 clove garlic, minced
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. chopped fresh rosemary
- 1 tsp. chopped fresh parsley
Instructions
PrintHeat oven to 375°F. Coat rimmed baking sheet with cooking spray. Cut thin slits crosswise into potatoes, making sure not to cut all the way through. Place potatoes on rimmed baking sheet.
In small microwave-safe bowl, microwave butter in 15-sec. intervals, stirring, until melted, about 1 min. Stir in garlic, salt and pepper; brush over outside of potatoes making sure mixture drips down in between slits. Bake until potatoes are tender and golden brown, about 1 hr., 10 min. Sprinkle with chopped rosemary and parsley.
