Ingredients

  • 2 (6 oz. each) boneless, skinless chicken breasts
  • 1 tsp. Italian seasoning blend
  • Kosher salt and pepper to taste
  • 1/2 to 1 cup marinara sauce, homemade or store-bought
  • 5 oz. bag baby spinach leaves
  • 1/2 to 1 cups shredded part-skim mozzarella
  • 1/2 to 1 Tbs. grated Parmesan
  • Red pepper flakes, oregano, and chopped herbs (optional)

Heat oven to 400°F . Mist both sides of each chicken breast with olive oil
spray, and season all sides with a liberal sprinkling of Italian seasoning blend and kosher salt. Place chicken on small baking sheet and bake 15–20 min. until internal temp. registers 165°F .

While chicken cooks, coat a large skillet with olive oil spray. Sauté spinach over medium-high heat until wilted down, about 3–5 min. (the spinach will likely be too much volume for the pan, so add extra handfuls as it wilts down). Season with salt and pepper. Set aside.

Heat broiler. Add a thin layer of marinara sauce to a casserole dish. Place
cooked chicken on top of sauce and layer each piece with marinara sauce,
sautéed spinach, mozzarella, Parmesan, and, if desired, a pinch of orega-
no, red pepper flakes and herbs. Broil for 1 min. until cheese is hot and
bubbly (watch carefully so it doesn’t burn!). Spoon thin layer of warmed
sauce on each plate before topping with chicken.
