Mummy Meatloaf
Amp up the fear factor with this monstrously good spin on a comfort food classic.

Ingredients
- 2 lbs. ground beef
- 3 large eggs
- 1¼ cups quick-cook oats
- 1 onion, peeled, chopped
- 1 red pepper, chopped
- ½ cup ketchup
- 1 Tbs. fresh thyme
- 1 (13.8 oz.) pkg. refrigerated pizza dough
- 2 cups cooked cavatappi pasta
- 1 cup marinara sauce, warmed
- Radish, olive and scallion slices
Instructions
- Heat oven to 350°F. Coat ovenproof bowl with cooking spray. Line baking sheet with parchment paper. In separate bowl, mix beef, eggs, oats, onion, pepper, ketchup and thyme; press into greased bowl. Bake 45 min.; unmold onto baking sheet.
- On floured surface, roll out dough to 8”x6” rectangle; cut into 12 (8”x½” long) strips. Drape over meatloaf; bake until dough is cooked and golden, about 15 min.
- Toss pasta with marinara sauce. Top meatloaf with pasta. Use radish, olive and scallion slices for eyes.
