Creamy + Dreamy Mushroom and Pea Risotto Recipe Is Only $1.33 A Serving

Risotto is one of my favorite go-to entrées at our local Trattoria. But I usually shy away from making it at home. All that stirring to achieve the perfect consistency can sometimes be a chore. That’s what inspired this Mushroom and Peas Risotto recipe. It’s a Twist on an Italian classic that bakes in the oven. Best of all, at only $1.33 per serving, it satisfies the hungriest of appetites.

Our clever trick to ensure this dish turns out just as velvety as the traditional — we combine convenient canned cream of mushroom soup and chicken broth to create the cooking liquid. How easy is that? Then fresh thyme adds a delicious herbal note that pairs perfectly with the mushrooms and peas. And Tangy Parmesan cheese gives it a nutty finish. Ingredients

  • 1 (32 oz.) cont. 33%-less-sodium chicken broth
  • 1 (10.5 oz.) can 98% fat-free condensed cream of mushroom soup
  • 1 Tbs. oil
  • 1 onion, chopped
  • 8 oz. mushrooms, sliced
  • 1 clove garlic, minced
  • 1½ cups Arborio rice
  • ½ tsp. dried thyme
  • ¼ tsp. pepper
  • 1 cup frozen peas, thawed
  • ½ cup grated Parmesan cheese + additional (optional)

Heat oven to 350°F. In large measuring cup, combine 3 cups broth and soup; reserve. In ovenproof 3-qt. pot or Dutch oven, heat oil over medium heat. Add onion; cook, stirring, until softened, 5–7 min. Add mushrooms; cook, stirring, until browned, 7–8 min.

Add garlic; cook 30 sec. Stir in rice, soup mixture, thyme and pepper. Bring to a boil. Cover. Bake until rice is tender, 25 min., stirring halfway through cooking time. Stir in peas, 1⁄2 cup cheese and remaining 1 cup broth during last 5 min. of cooking time. Sprinkle with additional cheese if desired.
