Peppermint Marshmallow Cookies
For a pretty (and pretty easy!) holiday treat, we covered these cookies in white chocolate, and using Mallomars creates a deliciously soft center.

Ingredients
- 1 Tbs. + 1 tsp. oil
- ½ tsp. peppermint extract
- 1½ cups white candy melts, melted
- 1 (8 oz.) pkg. marshmallow cookies, such as Mallomars
- 4 Starlight peppermint candies, crushed
Instructions
- Line rimmed baking sheet with wax paper. Stir oil and extract into candy.
- Working with one at a time, place cookies, top sides up, on fork. Spoon candy mixture over cookies, allowing excess to drip back into bowl. Lightly tap fork on edge of bowl to help candy cover cookies completely. Transfer to wax paper.
- While still wet, sprinkle cookies with crushed peppermints. Let dry before serving, about 15 min.
