Pulled-Chicken Sandwiches Recipe Gives Delicious New Life to Leftovers
A BBQ favorite with homemade slaw can be ready in a fast 20 minutes
Don’t get us wrong — we love having leftovers. They make for super-convenient, quick meals perfect for busy days. Trouble is, eating the same thing can get a bit boring. That’s why we came up with this Pulled-Chicken Sandwiches recipe. The secret? Instead of just piling it straight onto a roll right out of the fridge, we reheat chicken in some kicked-up chili sauce. Not only does this keep the meat from drying out, it gives the chicken a whole new flavor that your taste buds will love. We top that with a quick vinegary coleslaw for even more punch and a bit of crunch. Talk about yum!
Tip: Our recipe calls for shredded chicken. And while that’s easy enough to do with two forks, if you’re making several sandwiches, you can save time by using your stand mixer. Just use the paddle attachment and medium-low speed to beat the chicken until it’s shredded.

Ingredients
- 3 Tbs. apple cider vinegar
- 1 Tbs. oil
- ⅛ tsp. salt
- ⅛ tsp. pepper
- 3 cups packaged fresh coleslaw mix, from 14oz. pkg
- ⅓ cup chili sauce
- 2 Tbs. packed light brown sugar
- ½ tsp. smoked paprika
- 2 cups shredded rotisserie or leftover cooked chicken, at room temp.
- 4 sandwich buns, split
Instructions
PrintIn bowl, combine 1 Tbs. vinegar, oil, salt and pepper. Add coleslaw mix; toss until combined. In medium pot, combine chili sauce, sugar, paprika and remaining vinegar; over medium heat, bring to a boil. Reduce to medium-low; cook until hot, 3–5 min. Add chicken; cook, stirring, until heated through.
Dividing evenly, fill rolls with hot chicken mixture and 1 cup coleslaw mixture. Serve sandwiches with remaining coleslaw on the side.
