Ingredients

  • 6 center-cut bone-in pork chops, 3/4” thick, 3 lbs.
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbs. oil
  • 8 oz. sliced mushrooms
  • 1/2 cup chopped red onion
  • 1/2 cup condensed cream of mushroom soup

Sprinkle chops with salt and pepper. In large nonstick skillet, heat 1 Tbs. oil over medium heat. In 2 batches, cook chops, flipping once, until no longer pink near bones, 7–8 min. per side. Transfer to plate; cover. Reserve pan juices.

In same skillet, heat remaining oil. Add mushrooms and onion; cook, stirring, until golden, 5–8 min. Add soup and reserved pan juices; cook until flavors blend, about 5 min. Serve sauce over chops.
