Healthy Sesame Asian Vegetables Recipe is a Side Dish Sensation

This year, in the spirit of eating healthy, but also deliciously, I’ve really been trying to up my vegetable game. And while I still make all my favorites like cauliflower and broccoli, I’ve been working on eating more leafy greens. These veggies are the superstars of the nutrition world because of all the good-for-you compounds they contain. That’s why I love this sesame Asian vegetables recipe. The dish’s main ingredient is bok choy, a leafy green with a crisp, delicate flavor that’s loaded with healthy antioxidants, vitamins C and E, and beta carotene and selenium, which have all been shown to have cancer-fighting properties. And bok choy is really tasty, too!

In this recipe, we combine bok choy with snow peas and shiitake mushrooms and cook it with ginger, garlic and rice vinegar. The veggies have a nice crunch and the flavor is fresh, bright and zingy! Ingredients

  • 2 Tbs. sesame oil
  • 4 bulbs baby bok choy, halved lengthwise
  • ⅛ tsp. + ¼ tsp. salt
  • ¼ tsp. pepper
  • 8 oz. snow peas
  • 1 (3.5 oz.) pkg. shiitake mushrooms, stems removed, sliced
  • 1 Tbs. rice vinegar
  • 1½ tsp. grated peeled fresh ginger
  • 1 clove garlic, minced

In large nonstick skillet, heat 1 Tbs. oil over medium heat; add bok choy, ⅛ tsp. salt and ⅛ tsp. pepper. Cook, stirring, until softened, 5 min. Reduce heat to medium-low. Cover; cook until tender, 5 min. Transfer to plate.

In same skillet, heat remaining oil over medium-high heat. Add snow peas, mushrooms, remaining ¼ tsp. salt and ⅛ tsp. pepper. Cook, stirring, until crisp tender, 3-4 min. Stir in vinegar, ginger, garlic and bok choy; cook 1 min. Transfer to serving plate.
