If you love pasta like I do, and you also like shrimp, you’re going to flip over this tasty shrimp scampi linguine recipe. Jumbo shrimp sauteed with garlic and lemon juice are tossed with linguine and sprinkled with breadcrumbs, parsley and, if you like, sliced chili pepper. The dish comes together in just 30 minutes, and it’s amazing how much bold, bright flavor it has! The succulent shrimp and the al dente pasta soak up all the lemony, garlicky, buttery goodness, and the breadcrumbs on top add the perfect amount of crunch. The sliced chile pepper gives the dish some spice — though the recipe is just as delicious without it.

This dinner is so easy to make that you can easily whip it up on a weeknight, yet it’s impressive enough to serve to guests or to have it as your Sunday supper. Ingredients

  • 8 oz. linguine pasta
  • ⅓ cup fresh breadcrumbs, toasted
  • 1 lb. peeled, deveined jumbo shrimp
  • 2 cloves garlic, minced
  • ¼ cup lemon juice
  • Thinly sliced chili pepper and chopped fresh parsley (optional)
  • 3 Tbs. butter

In pot of salted boiling water, cook pasta according to package directions for al dente. Reserve 1⁄2 cup pasta cooking liquid; drain pasta. In small microwavesafe bowl, microwave 1 Tbs. butter until melted; stir in breadcrumbs. Reserve.

In large nonstick skillet, melt 1 Tbs. butter over medium-high heat. Add shrimp; cook, stirring, until shrimp are pink and opaque, 5-6 min. Add garlic; cook 1 min. or until fragrant.

Add in lemon juice, reserved pasta cooking liquid and remaining 1 Tbs. butter; gently stir until butter just melts, about 1 min. Add linguine; cook, gently stirring, until heated through, about 1 min.

Transfer to serving plate. Sprinkle with reserved breadcrumb mixture. If desired, toss with sliced chile pepper and sprinkle with chopped parsley.
