This Skillet Rice With Meatballs Recipe Comes Together Quick Thanks to Clever Shortcuts

Let’s face it, no one wants to slave over a hot stove after a long day. And I, for one, am always looking for shortcut ways to get a weeknight meal on the table without a lot of work. That said, it’s easy to jazz up a few store-bought items to create a delicious dinner that’s easy and delicious. Case in point: Our Skillet Rice with Meatballs recipe.

For the rice, we cook onions in olive oil before adding the grains. This step adds a rich savory note and takes just a few minutes. Since we use precooked frozen mini meatballs, there’s no need to thaw them ahead of time. Simply place them over the rice halfway through cooking. While they heat through, the seasoned juices melt over the rice for an extra layer of goodness. Then jarred pasta sauce is enhanced with all those flavors to tie the whole thing together. Ingredients

  • 1 Tbs. olive oil
  • 1 onion, chopped
  • 1 cup rice
  • ¼ tsp. pepper
  • 16 frozen cooked Italian-style bite-size meatballs, from 26-oz. pkg.
  • 1 cup tomato-basil pasta sauce, from 24-oz. jar
  • ¼ cup finely shredded Parmesan cheese
  • ⅓ cup fresh basil leaves

In 12" nonstick skillet, heat olive oil over medium heat. Add chopped onion to skillet; cook, stirring, until starting to soften, about 3 min. Stir in rice, pepper and 2 1⁄2 cups water.

Over high heat, bring mixture to a boil; reduce heat to medium-low. Cover and let simmer until rice is tender and liquid is absorbed, 18-20 min., adding meatballs on top during last 10 min. of cooking time.

Stir tomato-basil pasta sauce into rice and meatballs; cook, stirring occasionally, until mixture is heated through, about 2 min. Sprinkle with shredded Parmesan and fresh basil leaves just before serving.
