Sloppy Janes Recipe Gives the Classic Sandwich a Fun and Delicious Tex-Mex Twist

Taco sauce, corn and red pepper turn the same-old-Joe into a fiesta of flavor

Sloppy Joes are one of my childhood favorites. My mom would sometimes make them as a Friday night treat to kick off the weekend for us kids. Not only did they taste good but they also felt like a playful twist on our usual dinner. I like to make them for my family now (ah, tradition!), but occasionally I long to switch up Sloppy Joes a bit and give them new flavors. That was the inspiration for this Sloppy Janes recipe. Not only does it have bolder, better flavor, it’s healthier, too. But shhh! Your family won’t know that unless you tell them. They’ll be too busy eating and enjoying!

For this recipe, we use ground turkey instead of ground beef, and add red pepper and corn to the mixture. Then, to truly kick up the taste we add taco sauce for a Tex-Mex twist. Genuis! For crunch, we layer some coleslaw on the rolls and then add the turkey mixture and top it all with cheese. It’s like eating a taco and a sloppy Joe all at one. Ingredients

  • 1 Tbs. olive oil
  • 1 onion, thinly sliced
  • 1 red pepper, thinly sliced
  • 1 lb. ground turkey
  • ¼ tsp. salt
  • 1 (16 oz.) jar mild taco sauce
  • 1 cup frozen corn, thawed, drained
  • 1 cup prepared coleslaw
  • 6 rolls, split
  • 4 oz. Monterey Jack cheese, shredded

In large nonstick skillet, heat oil over medium-high heat. Add onion and pepper; cook, stirring occasionally, until softened, 4–5 min. Add turkey and salt; cook, stirring to break up meat, until no longer pink, 7–8 min.

Add taco sauce and corn. Reduce heat to medium-low; cook, stirring occasionally, until flavors blend and sauce thickens, about 6 min. Divide coleslaw evenly among roll bottoms, then top with turkey mixture, cheese and roll tops.
