Tex-Mex Meets Italian in This Spiced Beef with Corn, Peas and Penne Recipe — Just $1.73 a Serving
Pasta with meat sauce gets a fresh twist and delicious flavor from toasted chili powder
When I was growing up, my mom prepared a family favorite each night of the week. Monday night dinners were reserved for her spaghetti with meat sauce. I can still remember the wonderful aroma of the rich sauce simmering on the stove when I arrived home from school. But today, sometimes I like to switch things up a little. That’s what inspired this Spiced Beef with Corn, Peas and Penne recipe.
First, we brown onions and beef. Then for a Texas twist, we stir in chili powder and cook until the spice has a chance to “toast” before we mix in the tomatoes. This adds a layer of smoky goodness. Some colorful veggies bring the whole thing to life. We serve the sauce over penne, but any pasta shape you have on hand would be just as delicious — and it all adds up to just $1.73 per serving. Ingredients
- 8 oz. penne pasta
- 1 onion, chopped
- 1 lb. ground beef
- 1 red pepper, diced
- 2 tsp. chili powder
- 1/4 tsp. salt
- 1 (14.5 oz.) can crushed tomatoes
- 1 cup corn kernels
- 1 cup fresh peas
Instructions
PrintIn large pot of salted boiling water, cook pasta according to package directions for al dente; drain.
Coat nonstick skillet with cooking spray; heat over medium heat. Add onion; cook, stirring occasionally, until softened, about 6 min. Add beef; cook, stirring occasionally, until no longer pink, 8–10 min.; drain. Return to skillet.
Add red pepper, chili powder and salt; cook until pepper is softened, about 3 min. Add tomatoes with juices; bring to a boil. Reduce heat to medium-low. Cover; cook, stirring occasionally, until flavors blend, 20 min., adding corn and peas during last 10 min. of cooking time. Add pasta to skillet; toss until combined and heated through, about 3 min.
