Ingredients

  • 1 sheet (half of 17.3 oz. pkg.) frozen puff pastry dough, thawed
  • 2 Tbs. sun-dried tomato pesto
  • 1 cup baby spinach
  • ⅓ cup crumbled feta cheese

Heat oven to 400°F. Coat 8 muffin cups with cooking spray. On work surface, unfold puff pastry dough. Spread pesto over dough to within 1⁄4" of edge. Arrange spinach over pesto to cover. Evenly sprinkle feta cheese over spinach.

Roll up dough with filling jelly-roll style. Cut roll crosswise into 8 pieces. Place 1 piece, cut side up, in each muffin cup. Bake until pinwheels are golden brown and baked through in centers, 18–20 min. Let cool slightly in muffin cups before transferring to rack. Serve warm or at room temp.
