Delicious Steak ’n’ Potatoes Salad Recipe is Super Satisfying

I love salad, but oftentimes, no matter how yummy it is, it doesn’t fill me up. If, like me, you’re craving a real stick-to-your-ribs salad, this steak ‘n’ potatoes salad recipe is the perfect choice. It’s like eating a complete meal in salad form, with green beans, spinach and potatoes, and even some chorizo sausage tossed in along with the sirloin steak! We top our super salad with smoked almonds for crunch and a three-ingredient yogurt dressing that adds just the right amount of tang. (Tip: Make a double batch of the sauce to serve as a dip for veggies or chips.)

Ingredients

  • ½ cup plain nonfat Greek yogurt
  • 1 Tbs. lemon juice
  • 1 clove garlic, minced
  • 1 lb. baby potatoes
  • 8 oz. green beans, trimmed
  • 2 dried chorizo sausages, sliced
  • 1 lb. boneless sirloin steak
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • 6 cups baby spinach
  • ¼ cup smoked almonds, chopped

Prepare grill for medium-high directheat cooking. In small bowl, combine yogurt, lemon juice and garlic; reserve.

Bring large pot salted water to a boil. Add potatoes; cook until tender, 10–12 min., adding green beans during last 2 min. of cooking time. Drain well.

Arrange potatoes and beans in grill basket; grill, turning occasionally, until grill marks appear, 2–6 min. Grill chorizo 1–2 min. per side. Rub steak with salt and pepper. Grill, flipping once, 4–5 min. per side for medium-rare. Let stand 5 min. Halve potatoes; slice steak. Place spinach, potatoes, beans and chorizo on platter. Top with steak and almonds. Drizzle with reserved yogurt mixture.
