Light + Refreshing Strawberry Chicken Salad Recipe Is a Satisfying Summer Supper
Poppy seeds add a nutty note to this tasty toss
During summer I like to beat the heat and stay out of the kitchen. I tend to eat a tad lighter too. Since produce is at its best, dinner salads make a great choice for a refreshing meal. That’s why I love this Strawberry Chicken Salad recipe. The chicken cooks up on the grill so there’s no need to crank up the oven. Plus, we toss the salad with a cool dressing that really makes it shine.
We combine yogurt, mayonnaise, cider vinegar and honey. The honey adds a hint of sweetness that perfectly balances tangy yogurt and bright vinegar while the mayo makes it super creamy. Fruit pairs perfectly with grilled meats. Juicy strawberries add a burst of tart-sweet flavor that complements tender white meat chicken. Ingredients
- 1/3 cup plain nonfat Greek yogurt
- 2 Tbs. mayonnaise
- 2 Tbs. apple cider vinegar
- 1 Tbs. honey
- 1/4 tsp. garlic powder
- 2 boneless, skinless chicken breast halves, 1 lb.
- 1 Tbs. olive oil
- 7 cups mixed baby greens
- 2 cups strawberries, trimmed, sliced crosswise
- 1/2 tsp. poppy seeds
Instructions
PrintPrepare grill for medium-high direct-heat cooking. In bowl, whisk together yogurt, mayonnaise, vinegar, honey, 1/8 tsp. salt and 1/8 tsp. pepper; reserve.
In small bowl, combine garlic powder, 1/4 tsp. salt and 1/8 tsp. pepper. Coat chicken with oil; sprinkle with garlic mixture. Grill chicken, flipping once, until no longer pink in centers, 8–9 min. per side. Let stand 5 min. before slicing.
Place greens on serving platter. Top with sliced chicken and strawberries; drizzle with dressing. Sprinkle with poppy seeds.
