Zesty Turkey Fajita Recipe Is A Flavor-Packed Dinner Winner
A quick-prep marinade infuses this dish with a kick of smoky goodness
Marinades are a great way to add savory richness to meat and poultry. And you can customize them with all sorts of flavor combinations. Take this Turkey Fajita recipe. With just a handful of ingredients, our South-of-the-border-inspired marinade is the perfect balance of salty and tangy.
Most marinades contain an acid. It helps break down meat fibers so they retain more liquid and turn out extra juicy. In keeping with the theme, we start with fresh lime juice then add olive oil, smoked paprika, cumin and salt. The mixture does double duty as a soak for the turkey and the veggies. About 15 minutes is all it takes to infuse the ingredients, but for a bigger pop of smoky deliciousness, refrigerate the bags for up to 2 hours. Ingredients
- 1/4 cup lime juice (from about 3 limes)
- 3 Tbs. olive oil
- 4 cloves garlic, minced
- 1/2 tsp. smoked paprika
- 1/2 tsp. ground cumin
- 1 tsp. salt
- 3/4 tsp. pepper
- 1 lb. turkey cutlets, cut into 2" pieces
- 2 red or yellow peppers, halved, seeded, thinly sliced
- 1 yellow onion, cut into 6 wedges
- 4 scallions, white and light green parts only
- 12 (6”) corn tortillas, warmed
- Plain Greek yogurt, fresh salsa and chopped avocado (optional)

PrintIn small bowl, whisk lime juice, oil, garlic, paprika, cumin, 1/2 tsp. salt and 1/4 tsp. pepper. In large resealable food storage bag, combine turkey, remaining 1/2 tsp. salt and 1/2 tsp. pepper. Add half of marinade; seal bag.
In separate resealable food storage bag, combine vegetables and remaining marinade; seal bag. Chill bags, flipping once, at least 15 min.
Heat oven to 400°F. Line baking sheet with foil; add vegetables (discard marinade). Roast, stirring halfway through cooking, until tender and golden, 15 min.
Heat grill pan over medium-high heat. Remove turkey from marinade and pat dry; discard marinade. Grill turkey, flipping once, until cooked through and golden, about 4 min. Serve with vegetables and tortillas. If desired, top with yogurt, salsa and/or avocado.
