This Beef, Spinach and Feta Quesadillas Recipe is Insanely Delicious

A Tex-Mex favorite gets a tasty Greek twist with feta, spinach and oregano

I love Tex-Mex food. And while I typically order out when a craving hits, that can be expensive. So lately, I’ve been making some of my favorites, like quesadillas, at home. While I love the more traditional quesadilla dishes, I also like to mix things up a bit and try new flavor combinations. That was the inspiration for this beef, spinach and feta quesadillas recipe. It blends Greek flavors of tangy feta and fresh spinach and flavorful oregano with ground meat (you can use ground beef or lamb) and tortillas. Yum!

It’s speedy, too — the dish goes from stove to table in just 25 minutes, and requires only 10 minutes of prep. And it tastes so good. Ingredients

  • 1 lb. ground beef or lamb
  • 6 cups baby spinach, from 5-oz. cont., coarsely chopped
  • 2 cloves garlic, minced
  • ½ tsp. dried oregano
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • 1 cup crumbled feta cheese (4 oz.)
  • 4 (8") soft taco-size flour tortillas
  • Lemon wedges (optional)

Coat 12" nonstick skillet with cooking spray; heat over medium-high heat. Add beef; cook, stirring, until no longer pink, 7–8 min. Drain off fat, then return beef to skillet.

Add spinach, garlic, oregano, salt and pepper to skillet. Cook, stirring occasionally, until spinach is wilted, 2 min.; stir in feta. Dividing evenly, spread mixture over half of each tortilla; fold over filling.

Re-coat 12" nonstick skillet with cooking spray; heat over medium-low heat. In batches, cook quesadillas, pressing lightly with spatula and flipping once, until lightly browned and heated through, about 2 min. per side. If desired, serve with lemon wedges.
