In our recipe, we use ground chicken to make the meatballs and incorporate the blue cheese into the mixture so you get maximum cheesiness when you eat. We bake the meatballs and then brush them with a buttery, spiced-just-right hot sauce and top with some chives. This appetizer is super quick and easy to whip up. Ingredients

  • 1 lb. ground chicken
  • 1/2 cup Italian-style dry breadcrumbs
  • 1 egg
  • 1 clove garlic, minced
  • 1 tsp. celery seeds
  • 3 oz. blue cheese, cut into 24 cubes
  • 1/4 cup cayenne pepper sauce, such as Frank's Red Hot
  • 2 Tbs. butter, melted
  • 1 Tbs. chopped chives

Heat oven to 350°F. Coat rimmed baking pan with cooking spray. In bowl, combine chicken, breadcrumbs, egg, garlic and celery seeds.

Divide mixture into 24 portions; shape into balls around cheese. Transfer to pan. Bake until no longer pink near centers, 12–15 min. In bowl, combine hot sauce and butter. Brush over meatballs. Top with chives.
