I’m always looking for dishes with what I call the “wow factor” to serve to family and friends. These are recipes that are impressive enough for special occasions, but easy enough to whip up quick and without a lot of special ingredients that I have to go out and buy. That’s why I’m crazy about this chicken piccata recipe. The dish has everything I (or you!) could ever want — it’s delicious, gorgeous, and easy to make. And the flavor is so good. The brightness and zest of the lemon perfectly balances the slight saltiness of the capers to create an irresistible sauce for the chicken. Yum!

Serve this recipe with pasta or mashed potatoes, and a green veggie like broccoli, and you’ve got yourself a dinner winner! And trust me when I say you don’t have to save it for special occasions — I like to make it on weeknights or whenever I get a craving. Give it a try and you’ll see what I mean.

Ingredients

  • 1/3 cup + 1 Tbs. all-purpose flour
  • 1½ lbs. thin-sliced boneless, skinless chicken breasts
  • ¼ tsp. salt
  • 3 Tbs. butter
  • ¾ cup chicken broth
  • 1/3 cup white wine
  • 2 Tbs. lemon juice
  • 1 Tbs. drained capers
  • Lemon slices (optional)

Instructions

Transfer 1⁄3 cup flour to shallow dish. Sprinkle chicken with salt; coat with flour.

In large skillet, melt 2 Tbs. butter over medium heat. In batches, add chicken; cook, flipping once, until browned and no longer pink inside, 2-3 min. per side. Transfer to plate; cover with foil.

In skillet, whisk broth, wine, lemon juice and remaining flour until smooth; bring to boil. Cook, stirring occasionally, until thickened, 2 min. Stir in capers and remaining butter until melted. Top chicken with sauce. If desired, garnish with lemon slices.
