Super-Flavorful Chicken Stir-Fry Recipe is a Quick-Fix Dinner

When you’re looking for a speedy supper sensation, a stir-fry is just the thing. And this chicken stir-fry recipe, created by the pros in our test kitchen, is my new weeknight favorite. Loaded with chicken, crunchy bok choy and adorable baby corn, and flavored with ginger, sweet chili sauce, garlic and basil, it’s a delicious medley of flavors and textures. We even toss some peanuts into the mix for extra crunch and protein. But the real secret to this recipe — and what makes it so extra crave-worthy — is an ingredient you’ll want to keep in your pantry if you don’t already have it on hand: fish sauce! It’s slightly salty and a little sweet with a rich umami flavor, and it adds depth and complexity to dishes. It truly takes this stir-fry to the next level.
Once the veggies are quickly chopped and the sauce is whipped up, this stir-fry cooks up in less than 15 minutes. Serve it with rice for an insanely good dinner.

Ingredients
- ¼ cup sweet chili sauce
- 2 Tbs. rice vinegar
- 1 Tbs. fish sauce
- 3 bunches baby bok choy
- 2 Tbs. oil
- 1 (15 oz.) can baby corn, rinsed, drained
- 1 Tbs. grated ginger
- 2 cloves garlic, minced
- 1 lb. boneless skinless chicken breast, cut into ½"-thick strips
- ¼ tsp. salt
- ½ cup basil leaves, torn
- ⅓ cup cashews, chopped, toasted
Instructions
PrintMix first 3 ingredients. Halve bok choy crosswise; quarter stems lengthwise. In nonstick skillet, heat 1 Tbs. oil over medium-high. Add corn and bok choy stems; cook, stirring, until crisp tender, 5 min. Add ginger, garlic and bok choy leaves. Cook 2 min.; remove. Add remaining oil to skillet; heat over high. Add chicken; sprinkle with salt. Cook, stirring, until no longer pink, 4-5 min. Stir in sauce mixture and vegetables. Cook until heated through, about 2 min. Stir in basil and cashews.
