Chili-Glazed Meatloaf

Just five ingredients and a pinch of pepper are all it takes to get this hearty comfort food favorite ready for the oven.

  • 2 eggs
  • 1 1/2 lb. ground beef or meatloaf mix
  • 1/2 c. Italian-style dry breadcrumbs
  • 2/3 c. chili sauce
  • 1 small onion grated
  • 1/4 tsp. pepper


Heat oven to 350°F. Line rimmed baking sheet with aluminum foil. Grease foil with butter or coat with cooking spray, preferably olive oil spray.

In large bowl, lightly beat eggs. Add beef, breadcrumbs, 1/3 cup chili sauce, onions, and pepper; with hands, gently blend ingredients together.

Shape meat mixture into 9"x4" loaf on baking sheet. Bake 1 hr. or until juices run clear or meat thermometer inserted into center registers 160°F, brushing with remaining 1/3 cup chili sauce during last 15 min. of baking time. Let meatloaf stand 15 min. before slicing.
