And while most stew recipes take hours to cook, we wanted a dish that you can put together fast on a weeknight — or whenever the craving for a hearty bowl of deliciousness strikes. That was the inspiration for this yummy Italian sausage and vegetable stew recipe. The dish features potatoes, Italian sausage, ham and veggies cooked in a rich broth that’s brightened with a dash of Dijon mustard. The flavors are amazing and so is the warming satisfaction this dinner gives you when you eat it. You’ll want to make it every week!

Ingredients

  • 1 (14 oz.) pkg. fully cooked Italian pork sausage, such as Johnsonville
  • 1 (1 qt.) cont. low-sodium chicken broth
  • 2 (15 oz.) cans diced potatoes, rinsed, drained
  • 2 cups frozen peas and carrots
  • 1 Tbs. Dijon mustard
  • 1 tsp. dried thyme
  • ¼ cup diced ham

Coat large pot with cooking spray; heat over medium heat. Add sausage; cook, turning, until browned, 5 min. Remove; cut diagonally into 1⁄2"-thick slices. Reserve.

Add broth, potatoes, peas and carrots, mustard and dried thyme to pot; over high heat, bring to a boil. Reduce heat to medium-low; add ham and reserved sausage. Partially cover; cook until vegetables are tender and flavors blend, about 10 min. If desired, sprinkle with thyme.
