Mini Pita Canapé Wreath

Ingredients
- 2 cups cooked broccoli florets
- ¼ cup sliced scallions
- ¼ cup diced roasted red peppers
- 2 Tbs. Italian dressing
- 1 (7 oz.) pkg. mini pitas
- 1 (6.5 oz.) pkg. garlic-and-herb or white cheddar-sage spreadable cheese, such as Boursin
- 2 Tbs. chopped fresh parsley
- 1 red bell pepper
Instructions
- In bowl, toss broccoli, sliced scallions, roasted red peppers and Italian dressing; set aside. Spread tops of mini pitas with cheese; reserve 1 cheese-topped pita.
- Top remaining pitas with broccoli mixture; sprinkle with parsley. Arrange in circle on platter, leaving room for reserved pita.
- Cut bottom off red pepper; separate rounded lobes. Cut triangle and 2 strips from remaining pepper. Arrange 2 lobes, triangle and strips on reserved pita to create bow. Add to platter.
