Ingredients

  • 1 Tbs. butter, at room temp.
  • 3 lbs. all-purpose potatoes, peeled, thinly sliced
  • 1½ cups milk
  • 1 cup heavy cream
  • 1 clove garlic, minced
  • 1 tsp. salt
  • ¼ tsp. freshly ground pepper
  • 8 oz. Gruyère cheese, shredded
  • Fresh thyme leaves (optional)

Heat oven to 325°F. Brush shallow 3-qt. baking dish with butter. In large pot, combine potatoes, milk, cream, garlic, salt and pepper. Over medium-high heat, bring just to boil, stirring occasionally; remove from heat. Using slotted spoon, transfer half of potatoes to baking dish; sprinkle with 1 cup cheese. Top with remaining potatoes, then milk mixture. Sprinkle with remaining cheese. Bake until tender and golden, 40–45 min. Let stand 5 min. before serving. If desired, sprinkle with thyme.
