Slow-Cooker Chicken Cacciatore

A dash of balsamic vinegar imparts extra richness to this saucy Italian classic made easy in the slow cooker.

Ingredients

  • 2 red peppers, sliced
  • 1 onion, sliced
  • 2 cloves garlic, sliced
  • 3 lbs. chicken thighs
  • ¼ cup all-purpose flour
  • 1 (14.5 oz.) can diced tomatoes, drained
  • 1 (6 oz.) can tomato paste
  • 1 Tbs. balsamic vinegar
  • 1 tsp. dried Italian seasoning
  • ¼ cup capers

Instructions

  1. Add peppers, onion and garlic to slow cooker. Toss chicken with flour; shake off and reserve excess flour. Set chicken on veggies.
  2. Mix tomatoes, paste, vinegar, seasoning and reserved flour; pour on chicken. Cook on low setting until tender, 8–10 hrs. Skim off fat. Stir in capers; add olives, if desired.
