Slow-Cooker Chicken Cacciatore
A dash of balsamic vinegar imparts extra richness to this saucy Italian classic made easy in the slow cooker.

Ingredients
- 2 red peppers, sliced
- 1 onion, sliced
- 2 cloves garlic, sliced
- 3 lbs. chicken thighs
- ¼ cup all-purpose flour
- 1 (14.5 oz.) can diced tomatoes, drained
- 1 (6 oz.) can tomato paste
- 1 Tbs. balsamic vinegar
- 1 tsp. dried Italian seasoning
- ¼ cup capers
Instructions
- Add peppers, onion and garlic to slow cooker. Toss chicken with flour; shake off and reserve excess flour. Set chicken on veggies.
- Mix tomatoes, paste, vinegar, seasoning and reserved flour; pour on chicken. Cook on low setting until tender, 8–10 hrs. Skim off fat. Stir in capers; add olives, if desired.
