Watermelon Berry Punch

Beat the heat with this fruity sipper served over cubes of refreshing frozen watermelon!

Ingredients

  • 1 small whole watermelon, about 4 lbs., or 6 cups watermelon cubes, about 2 lbs.
  • 1 1/3 c. sliced strawberries, from scant 2 cups whole strawberries
  • 1/3 c. sugar
  • 1 1/2 c. pineapple juice
  • from 1-2 lemons
  • 1 c. seltzer water
  • Lemon slices, optional

Line rimmed baking sheet with plastic wrap. If using whole watermelon, trim rind; cut 1” cubes from flesh. Spread 3 cups watermelon cubes over rimmed baking sheet; freeze until solid, at least 3 hours.  

Meanwhile, in small pot, combine strawberries, sugar, and ½ cup water; over high heat, bring to boil. Reduce heat to low; simmer 10 minutes. Cool slightly; transfer to blender. Cover; blend until smooth. Refrigerate until ready to use.  

In blender, puree remaining 3 cups watermelon cubes until smooth. To assemble punch, combine watermelon puree, pineapple juice, lemon juice, ½ cup water, and reserved strawberry puree. Refrigerate until ready to serve. Serve punch over frozen watermelon cubes. If desired, garnish with lemon slices.
