This Balsamic Roast Beef Wraps Recipe Will Be Your New Lunchtime Favorite

Whether I’m prepping for a weekend lunch or making sandwiches for the week ahead, this balsamic roast beef wraps recipe is one of my go-tos. Ready in 20 minutes from start to finish, they’re just the thing when I’m craving something tangy and satisfying. The best part? They’re also packed with protein, which helps keep afternoon cravings at bay.

At the Woman’s World test kitchen, we made these balsamic roast beef wraps extra flavorful by using garlic-pesto spinach wraps and layering fresh tomatoes, red onion and baby spinach inside along with the roast beef. To turn these flavorful bites into a ham and Swiss version, simply omit the basil and spinach, and sub in sliced deli ham and Swiss cheese for the roast beef and mozzarella, and spread the wraps with honey mustard.

Ingredients

  • 1/2 cup fresh basil leaves
  • 1/3 cup balsamic vinaigrette salad dressing
  • 1/2 tsp. grated lemon zest
  • 2 tsp. lemon juice
  • 1 clove garlic, minced
  • 4 garlic-pesto spinach wraps, from 14-oz. pkg.
  • 1/2 lb. deli-sliced roast beef
  • 8 oz. fresh mozzarella cheese, thinly sliced
  • 3 tomatoes, sliced
  • 1/4 cup sliced red onion
  • 1 cup baby spinach

Instructions

Finely chop enough basil to equal 2 Tbs.; transfer to bowl. Stir in dressing, lemon zest, lemon juice and garlic.

Brush one side of each wrap with dressing mixture; layer beef, cheese, tomato, red onion, spinach and remaining basil leaves over. Roll up; diagonally cut each in half. Serve immediately or wrap and chill.
