Caramelized Apricot Pudding Parfaits
Buttery brown sugar-glazed apricots add an easy gourmet touch to melt-in-your-mouth French vanilla pudding.

- 2 (3.4 oz.) pkgs. instant French vanilla pudding mixes
- 4 cups cold milk
- 6 apricots, each cut into 8 wedges
- ¼ cup + 2 tsp. packed light brown sugar
- 2 Tbs. butter, cut into pieces
- 2 cups whipped topping
Instructions
- Prepare pudding mixes according to package directions using cold milk; divide evenly among eight 8-oz. glasses. Refrigerate at least 5 min.
- Heat broiler. Line rimmed baking sheet with foil. In bowl, toss apricot wedges with ¼ cup packed brown sugar until coated; transfer to baking sheet. Dot with butter. Broil 3–5 min., until golden brown and tender; cool slightly. Reserve juices in pan.
- Dividing evenly, top puddings with apricot wedges and reserved pan juices. Just before serving, dividing evenly, top parfaits with whipped topping and sprinkle with remaining brown sugar.
