After the long work week, I love to treat myself to a well-deserved cocktail. And a martini always hits the spot. But now that the air is brisk and trees are dotted with hints of crimson and orange, I crave something a little more seasonal. That’s why this Pumpkin-Amaretto Martini recipe is ideal. It’s perfect for a festive gathering. Plus, it’ll put everyone in the spirit.

Simple syrup is super-easy to make — it’s just equal parts sugar and water simmered until the sugar dissolves. Mixologists use it to sweeten all sorts of cocktails. For an extra kick, we add fresh ginger to ours. The peppery finish pairs deliciously with nutty amaretto. In another nod to autumn, we stir in a dollop of pumpkin puree. How fun is that? Ingredients

  • 1/3 cup sugar
  • 6 (1/4” thick) round slices fresh ginger
  • Ice cubes
  • 1 cup vodka
  • 1 cup orange juice
  • 3/4 cup amaretto
  • 3/4 cup canned pumpkin, from 15-oz. can

Place 6 martini glasses in freezer. In pot, combine sugar, 1/2 cup water and ginger; over medium heat, bring to a boil. Cook, stirring often, until sugar is dissolved and flavors blend, 1–2 min. Transfer to heatproof bowl; let cool, leaving ginger in syrup. Strain.

In ice-filled cocktail shaker, mix 1/3 cup vodka, 1/3 cup orange juice, 1/4 cup amaretto, 1/4 cup pumpkin and 1/3 of syrup. Cover; shake. Strain into 2 chilled glasses. Repeat twice to make 4 more drinks.
