Spiced Pork Roast

Ingredients
- 1/4 c. apple jelly
- 1/4 c. dark rum or apple juice
- 2 tsp. ground cumin
- 3/4 tsp. salt
- 1/2 tsp. garlic powder
- 1/2 tsp. cracked pepper
- 1/4 tsp. cayenne pepper
- 3 lb. boneless pork loin roast
Instructions
PrintHeat oven to 375°F. In small pot, combine jelly and rum or juice; over high heat, bring to boil. Reduce heat to low; cook, stirring occasionally, until thickened slightly, 3-5 minutes. Cool; reserve.
Mix cumin, salt, garlic powder, pepper and cayenne. Place pork in small roasting pan; rub all over with spice mixture. Roast until meat thermometer inserted into thickest part of pork registers 155°F, about 1 hr. to 1 hr., 5 min, brushing several times with jelly mixture during last 15 min. of cooking time. Let stand 10 min. before slicing.
