Zesty Southwest Turkey Tacos

These quick-cooking bites are a perfect way to reinvent leftovers — swap in whatever cooked meat you have on hand.

Ingredients

  • ½ cup leftover cranberry sauce
  • 1 small jalapeño pepper, minced
  • 1 lime, zested and juiced
  • 2 Tbs. canola oil
  • 3 cups diced leftover cooked turkey
  • 2 tsp. Southwest seasoning blend
  • 12 taco shells, heated
  • 1½ cups shredded lettuce
  • 1½ cup shredded red cabbage
  • 1 Tbs. chopped fresh cilantro

Instructions

  1. In bowl, combine cranberry sauce, jalapeño peppers, 2 tsp. lime juice and ¼ 1⁄4 tsp. lime zest.
  2. Heat oil in skillet. Add turkey, seasoning blend and ¼ cup water. Cook 4 min. or until water evaporates.
  3. Divide turkey mixture among taco shells. Top with last 3 ingredients and cranberry-sauce mixture.
