Garlic-Thyme Slow-Cooker Chicken

This slow-cooker roast comes out extra juicy and tender, setting the stage for a deliciously good-for-you meal the whole family will love.

Ingredients

  • 1 onion, peeled and cut into thick slices
  • 1 (5 lb.) roaster chicken
  • 4 cloves garlic, peeled
  • 2 sprigs fresh thyme
  • 2 tsp. smoked paprika
  • 1 tsp. dried thyme
  • 1½  tsp. salt
  • ½ tsp. garlic powder
  • ¼ tsp. cayenne pepper

Instructions

  1. Place onion slices in bottom of 6-qt. slow cooker. Pat chicken dry. Place garlic and fresh thyme in cavity. In bowl, combine spices. Rub over chicken. Place chicken, breast side down, on onions. Cover; cook on high 4 hrs. or low 6 to 8 hrs. or until 165°F.
  2. If desired, carefully transfer chicken to large baking dish and place in oven. Broil 3 to 5 min. or until skin is crispy. Remove; transfer to cutting board. Let sit 15 min. before carving.
