Air-Fried Avocado Wedges
A bit of Parmesan in the coating is the secret to achieving irresistible nutty flavor in these heart-healthy bites.

Ingredients
- ½ cup seasoned panko breadcrumbs
- ¼ cup grated Parmesan cheese
- ¼ tsp. salt
- ¼ cup all-purpose flour
- 1 egg, beaten
- 2 firm-ripe avocados
- 1 lemon
- ½ cup mayonnaise
- ½ cup plain nonfat Greek yogurt
- ¼ tsp. garlic powder
Instructions
- In small bowl, combine breadcrumbs, Parmesan and salt. In separate bowls, add flour and egg. Cut avocados in half; remove pits. Scoop avocado flesh out of skins. Cut each half into thin wedges (about 8 wedges per half). Working with one piece at a time, coat avocado pieces with flour, then egg, then panko mixture, gently pressing to adhere. Transfer to baking sheet.
- Place crisper plate in basket of 5-qt. air fryer; coat with cooking spray. Place basket in air fryer; heat to air-fry at 400°F. In batches, air-fry avocado wedges in single layer until golden brown, 7–8 min. per batch.
- Grate 2 tsp. zest and squeeze 1 tsp. juice from lemon. In small bowl, stir together mayonnaise, yogurt, lemon juice, zest and garlic powder until combined. Serve with avocado fries for dipping.
