Bow-Tie ‘n’ Bean Turkey Soup
Full of fiber thanks to red kidney beans and sliced zucchini, this hearty soup is a real soother.

Ingredients
- 1 medium onion, minced
- 1 cup halved and thinly sliced zucchini
- 2 Tbs. olive oil
- 2 (14.5 oz.) cans diced Italian tomatoes
- 4 cups low-sodium chicken broth
- 1 (15.5 oz.) can red kidney beans, drained and rinsed
- 2 cups cubed cooked turkey
- 4 oz. mini farfalle pasta, cooked
- ¼ cup minced fresh basil
Instructions
- In pot over medium-high heat, cook onions and zucchini in oil 3 min. Stir in next 3 ingredients. Bring to a boil. Reduce heat; let simmer 10 min.
- Add turkey and pasta. Cook 5 min. Stir in basil. Season with salt and pepper.
