Bow-Tie ‘n’ Bean Turkey Soup

Full of fiber thanks to red kidney beans and sliced zucchini, this hearty soup is a real soother.

Ingredients

  • 1 medium onion, minced
  • 1 cup halved and thinly sliced zucchini
  • 2 Tbs. olive oil
  • 2 (14.5 oz.) cans diced Italian tomatoes
  • 4 cups low-sodium chicken broth
  • 1 (15.5 oz.) can red kidney beans, drained and rinsed
  • 2 cups cubed cooked turkey
  • 4 oz. mini farfalle pasta, cooked
  • ¼ cup minced fresh basil

Instructions

  1. In pot over medium-high heat, cook onions and zucchini in oil 3 min. Stir in next 3 ingredients. Bring to a boil. Reduce heat; let simmer 10 min.
  2. Add turkey and pasta. Cook 5 min. Stir in basil. Season with salt and pepper.
