Total Time:

30 min.

  • 3 avocadoes, pitted, peeled
  • 2 Tbs. lime juice
  • 4 oz. cream cheese, at room temp.
  • 1 (4 oz.) can mild diced green chilies, drained
  • ¼ cup chopped red onion
  • ¼ cup chopped fresh cilantro
  • ½ tsp. salt
  • ½ cup sour cream
  • Black concentrated food coloring
  • ¼ cup ketchup
  • Blue corn tortilla chips

  1. In bowl, using fork, mash avocadoes with lime juice until smooth. Stir in cream cheese, chilies, onion, cilantro and salt. On serving plate, spread mixture into 6” square.
  2. Tint ¼ cup sour cream black with food coloring. Transfer black sour cream, ketchup and remaining untinted sour cream to separate plastic sandwich bags; snip tiny hole in one corner of each. Using some of untinted sour cream, pipe on eyes. Using black sour cream, pipe on pupils, nose, eyebrows and scars. Using ketchup, pipe on lips. For hair, arrange tortilla chips on plate at top of dip; pipe on remaining untinted sour cream in zigzag lines. Serve with additional chips.
