This chicken Milanese recipe is a fresh spin on the Italian classic that’s perfect when you want to indulge guilt-free. It’s an easy weeknight meal ready in 35 minutes and so easy to customize. Plus, lean chicken breast reduces the overall fat content and baking in the oven requires less oil. You’ll still get that golden crust, just without the grease! We brushed the chicken with ranch dressing before coating in crispy potato flakes to add creaminess and tangy flavor as well as a crunchy exterior. - ½ cup potato flakes
- ¼ cup all-purpose flour
- 1 tsp. dried Italian seasoning
- ¼ tsp. onion powder
- ¼ tsp. garlic salt
- 4 boneless skinless chicken breasts
- ¼ cup Greek yogurt ranch dressing
Instructions
Heat oven to 350°F. In shallow bowl, combine potato flakes, flour, Italian seasoning, onion powder and garlic salt.Â
Lightly pound each chicken breast to ¼" thickness; season with salt and pepper. Brush chicken with ranch dressing. Coat with potato flake mixture.Â
Place chicken on greased rimmed baking sheet; generously coat with cooking spray. Bake for 20 min. or until 165°F, turning after 15 min. Serve immediately.Â
