Ultra-Refreshing Cucumber-Mint Spritzers Recipe Will Be Your Go-to Summer Sip

Our spa-inspired drink is perfect for cooling off on warm summer evenings

Summer is the ideal time to kick back and relax with a thirst-quenching drink. And here at Woman’s World we’re always looking for fun ways to put a spin on a classic. That’s what inspired us to come up with this Cucumber-Mint Spritzers recipe.

Agua fresca (literally β€œfresh water”) is a traditional Mexican beverage that has been around for ages. It’s simply water infused with fruit, vegetables or flowers. And today this delightful sip is sometimes served at spas. We decided to kick it up a notch and created this adults-only twist you’ll want to imbibe all summer long. Plus, it’s super-easy to whiz up in the blender. Cucumbers and mint make a cool combination. We stir in vodka, then for a zingy finish, splash in ginger liqueur. It’s deliciously boozy! Just one sip and we promise, you’ll be hooked! Prefer a mocktail version? Simply sub in ginger beer for the liquors. Either way, whip up a batch then send us a comment below.

Ingredients

  • 4" piece seedless cucumber, peeled
  • 1 lime
  • 8 oz. vodka
  • ΒΌ cup fresh mint leaves + additional for garnish
  • 4 oz. ginger liqueur
  • 8 oz. lemon seltzer
  • Ice cubes
  • Cucumber slices

Instructions

Quarter cucumber. Squeeze 2 Tbs. juice and grate 1 tsp. zest from lime. In blender, mix vodka, ΒΌ cup mint, cucumber and lime juice. Puree. Stir in ginger liqueur and zest.

Fill 4 glasses with ice. Divide mixture among glasses. Top with seltzer. Garnish with cucumber and mint.
