- 1 sweet potato, baked
- 1/2 tbsp olive oil
- 1/4 c low-fat cheese
- Your favorite toppings
Slice sweet potato in half and mash flesh slightly with fork. Drizzle with olive oil; sprinkle with desired seasonings. Add cheese and toppings.
Bake at 350°F until potato is heated through and cheese melts.
