Cheesy Chipotle-Mayo Sliders

Pickle relish and spiked mayo make these burger bites so irresistible, guests will gobble them up faster than you can say “Touchdown!”

  • 3/4 c. mayonnaise
  • 1/2 tsp. chipotle chile pepper
  • 2 lb. ground beef
  • 1/2 c. sweet pickle relish
  • 1/4 c. ketchup
  • from 15-ounce package, split
  • 6 oz., quartered
  • Pickle slices, tomato slices, torn Romaine lettuce, and ketchup
  • Bamboo toothpicks (optional)


Position rack so that tops of burgers on rack in pan are four inches from broiler. Preheat broiler. Mix mayo and pepper; reserve. Mix beef, relish, and ketchup; shape into 16 3/8-inch-thick patties. In two batches, place on rack in broiler pan. Broil, turning once, about two minutes per side. Spread cut sides of rolls with mayo mixture. Place two pieces cheese on each bun bottom. Broil 15 seconds or until cheese melts; top with burgers, pickles, tomatoes, lettuce, ketchup, and bun tops. Skewer with toothpicks.
