- 1 tbsp olive oil
- 2 c spinach
- 4 eggs, lightly beaten
- 1 c halved cherry tomatoes
- 1 scallion, sliced
- 1/4 c shredded sharp cheddar cheese
- In nonstick skillet, heat oil over medium heat. Add spinach; cook, stirring, until just wilted, about 3 min.
Add eggs to skillet; cook, stirring, until just set in center, 4 min. Add tomatoes and scallion. Using spatula, fold omelet in half; top with cheese. Season to taste with salt and pepper.
